Dear Cherubs, the world’s most prestigious restaurant rankings have a new champion, and it comes from a small Basque village where fire, smoke and patience have just beaten some of the planet’s most ambitious kitchens. Asador Etxebarri has officially claimed the No. 1 position in the 2026 The 50 Best Restaurants ranking, putting Bizkaia firmly in the global culinary spotlight.
The announcement was made on 4 November at a gala held at the Teatro Municipal in Lima, Peru. For the Basque Country, this is more than another restaurant award. It is international recognition for a culinary philosophy that proves you don’t necessarily need complicated techniques, futuristic equipment or a kitchen resembling a spaceship to make extraordinary food.
A village restaurant with a global reputation
Located in Axpe, in the municipality of Atxondo, Asador Etxebarri has spent decades building its reputation around one deceptively simple ingredient: fire.
Led by chef Bittor Arginzoniz, internationally also known as Victor Arguinzoniz, the restaurant was established in 1990. Its approach is radically focused on the quality of ingredients and the precise control of wood-fired cooking.
And when we say fire, we mean serious fire expertise. Arginzoniz has developed a distinctive approach to grilling, working with different types of wood and carefully controlling temperatures to bring out the natural flavours of individual ingredients.
Rather than burying produce beneath elaborate sauces or unnecessary decoration, the kitchen allows the ingredients to do most of the talking. Seafood, vegetables and carefully selected meats are transformed through smoke, heat and timing.
According to the official announcement from The 50, the restaurant’s tasting experience features 14 courses. It is an approach that sounds straightforward until you remember that mastering something as apparently simple as cooking over an open flame can take a lifetime.
From second place to the top of the world
This victory has been a long time coming.
Asador Etxebarri finished second in the 2025 rankings, narrowly missing the top position behind Lima’s Maido. This year, however, the Basque restaurant finally secured the crown.
The 2026 podium was completed by Bangkok’s Gaggan in second place and Copenhagen’s Alchemist in third. Mexico City’s Quintonil came fourth, while Hong Kong’s Wing occupied fifth.
The competition draws on the opinions of more than 1,100 voters across 28 geographical regions, including chefs, restaurant professionals, food writers and experienced diners. It is one of the most influential international restaurant rankings, although, like any ranking system, it reflects the opinions and priorities of its voting academy rather than an objective measurement of culinary perfection.
For the Basque Country, the result reinforces something its food culture has been demonstrating for generations: extraordinary cooking does not always need to shout.
The region has long been associated with exceptional produce, traditional grills, seafood and a remarkable concentration of internationally recognised restaurants. Etxebarri’s achievement adds another chapter to that reputation.
There is also something rather satisfying about the location. While the world’s culinary capitals compete with spectacular architecture, extravagant interiors and elaborate dining concepts, the new champion operates from a village in the foothills of the Basque mountains.
Perhaps that’s the real lesson here. Sometimes, the secret isn’t reinventing the wheel. It’s knowing exactly how to control the fire underneath it.
